Background:

Gupchup consists of a round hollow puri (a deep-fried crisp flatbread), filled with a mixture of flavored water (known as imli pani), tamarind chutney, chili powder, chaat masala, potato mash, onion, or chickpeas.[

Phuchka (or fuska or puska) differs from panipuri in content and taste. It uses spiced mashed potatoes as the filling. It is tangy rather than sweetish while the water is sour and spicy.

Pinaki, thank you for the detailed description of the food and its names. The food in India, including the street food, is terrific, and I have many fond memories of it. I like the composition of your photograph. The red basin on the lower left and the red box on the upper right form a strong diagonal counterpoint. Pinaki, perfect street and photo travel image. The vendor was not very happy from getting his picture taken. It is a busy background and the light in the front of the bus is distracting but unavoidable, but still represents a culture and a place. The image is sharp. This image tells me a lot about the culture in Kolkata and definitely fits the Photo Travel definition. I only wish he was not looking directly at the camera. His look suggests that he is posing and makes it difficult for judges to make sure this is not a set-up. The street vendor at Kolkata is an interesting travel image. What I like about it is that the composition is very well done. You have captured the vendor at a slight angle but everything that is important is included and not clipped. Such as the table with the writing, the glass box on the top, the entire person and even the red bowl to the left.
