There is a zoo that is a joy to visit, especially the giraffes. He had just taken a drink of water so what is an animal to do lick their lips and make a mess. I am assuming that this would go in general because of the zoo setting.
In post I brought this into PS and cropped way in. I ran this through Topaz AI brought it into ACR filter masked the head added texture for the tongue and ears. brought down shadows and highlights. The eyes were not in the mask. I then masked the eyes and brought down the blacks. When I brought it back in from ACR I inverted the mask. I was able to adjust the curves to make the head pop and the background less distractive.

This is a really fun image, Darcy! I also agree with most of your processing. I just don't fully understand some of the description. In general you want to make the eyes brighter - that typically means increasing both shadows and highlights, expecially highlights to emphasize any available catchlight and pull the viewer's eyes to your subject's eyes. I do think you could pull these up a little more. It needs to be subtle of course.
